Chocolate Covered Apricots and Almonds

Last year I took my daughter for a “date” to the mall. In the mall there is a Godiva store, which sold chocolate covered apricots. I find myself dreaming of this tasty treat now that it is Christmas time again. Unfortunately I am not willing to splurge on the hefty price tag that came with it. So here is my recipe of how to make this. Please note that the salt is optional, however if you use the sauce for almonds I highly recommend it. The salt gives it a nice sweet and savory balance that compliments the nuts. Hope you enjoy!

1 cup of semi sweet chocolate
1/2 tsp of vanilla extract (the real stuff)
1/4 tsp salt (optional)
2 Tbsp unsalted butter
1 cup of apricots or almonds

1. In a double boiler melt chocolate with vanilla, salt, and butter over medium heat. Stirring frequently to keep chocolate from separating or becoming scorched.

2. When the chocolate becomes smooth and glossy remove from heat. Keep stirring gently while dipping the ends of apricots into the chocolate.

3. Lay apricots on a wax paper lined baking sheet and allow to cool for 5-10 minutes so the chocolate can set.

*If using almonds, dump all the almonds in the chocolate stir until coated. Then drop them by the spoonful onto the baking sheet to make clusters. It will take almost the entire 10 minutes for them to harden.
